Golden Fish Cajun Style.

Ingredients:

2 tablespoon butter

2 tablespoon vegetable oil

4 catfish fillets

3 tablespoon Cajun seasoning

1 lime, quartered

4 green onions

Preparation:

Dry fish using a paper towel.

Sprinkle fish with Cajun seasoning on both sides. 

Heat butter and oil using a large skillet cast iron over high heat until they are hot, but not smoking. 

Place fish in hot skillet. 

Cook one side until fish is opaque in that part, about 5 minutes. 

Turn around to the other side carefully to avoid breakage. 

Cook on the other side about 3 minutes.

Remove the fish and serve hot using the green onion and lime as garnishes.

Serve 4.
