Ingredients:
20 ounces cod
fillets
3 tablespoons
olive oil, divided
½ cup fresh
orange juice
½ cup fresh
lemon juice
¼ cup fresh
lime juice
½ teaspoon
hot red pepper sauce
1 tablespoon
white-wine vinegar
1 teaspoon
salt
1 cup red
onion, minced
6 green
onions, minced
1 tablespoon garlic, minced
⅓ cup finely parsley, chopped
¼ teaspoon black ground pepper
1 red onion,
thinly sliced into rings
Preparation:
Preheat oven
to 400°F.
Grease a
baking sheet.
Arrange
fillets on sheet.
Brush with 1
tablespoon oil.
Bake until
fish flakes easily with a fork, about 15 minutes.
Meanwhile,
combine orange juice, lemon juice, lime juice, remaining oil, hot pepper sauce,
vinegar, salt, red minced onion, green onions, garlic, parsley and pepper in a small bowl;
mix well.
Flake fillets
into a large bowl.
Add juice
mixture; mix well.
Spoon salad
into individual bowls.
Garnish with
red onion rings.
Serve 6.
