Carolina Red Rice

Carolina Red Rice


3 tablespoons canola oil

1 pound smoked sausage, sliced

2 medium yellow onions, diced small

1 tablespoon minced garlic

3 ¼ cups water

1 (6 ounces) can tomato paste

2 teaspoons plus ½ teaspoon salt

1 tablespoon brown sugar

1 teaspoon fresh ground black pepper

1½ cups long grain rice, uncooked


Brown slices of sausage in oil.

Add onion, garlic and ½ teaspoon salt.

Cook until onion softened.

Add water, tomato paste, remaining salt, brown sugar and black pepper.

Let simmer 20 minutes.

Add rice and stir.

Transfer to a 9×13-inch pan and bake at 350°F for 35-40 minutes.
