Tuna Quinoa Surprise
Ingredients:
½ tablespoon
olive oil
1 cup
mushrooms, chopped
2 tablespoons yellow onion, chopped fine
2 teaspoon
garlic, minced
4 cups
spinach, raw
¼ teaspoon
salt
½ teaspoon fresh ground black pepper
½ cup quinoa,
cooked according to package directions
1 cup tuna,
packed in water and drained well
Preparation:
Cook quinoa
according to package directions.
Heat olive
oil in a medium skillet.
Sauté onion, garlic
and mushrooms until garlic start to brown slightly.
Place raw
spinach in pan and begin to sauté.
Cook until
spinach is done, add salt and pepper and toss.
Stir in tuna
and cook over heat for just a few minutes to warm tuna.
Combine with
cooked quinoa and serve immediately.
Serve 2.
