Italian
Style Oven Fried Chicken
While
all things are meant to be challenged, some things are certainly just meant to
be
‘tweaked.’ This is certainly one of those instances.
Ingredients:
About 25
pieces of chicken (wings and legs)
2 cups flour
2 ½ cups breadcrumbs
(Italian style)
5 eggs
1 ounce water
Juice of half
a lemon
½ cup olive
oil
1 teaspoon
oregano, dried
1 teaspoon basil, dried
Preparation:
Preheat oven
to 375°F.
Place flour
in bowl, add Signature Spice Mix to flour.
In a separate
bowl beat eggs, add water.
Place
breadcrumbs in separate bowl.
Coat chicken
with flour then dip chicken in egg wash.
Then, roll
the chicken in breadcrumbs.
Place chicken
in baking dish.
Combine olive
oil, lemon juice, oregano, and basil.
Drizzle this
over the chicken before baking.
Bake for
about 1 hour.
Garnish with
lemon and parsley.
Serve 6.
