Roasted Ranch Potatoes with Bacon and Cheese

Roasted Ranch Potatoes with Bacon and Cheese

Ingredients:

2 pounds potatoes (unpeeled, washed and cut into chunks)

½ cup ranch dressing (bottled, not packet)

¼ cup shredded cheddar cheese, plus more for topping (if desired)

¼ cup crumbled, cooked bacon

1 tablespoon dried dill weed

3 scallions, washed and chopped

Salt, to taste

Black ground pepper

Non-stick cooking spray

Preparation:

Preheat oven to 350°F.

Mix together, in a large bowl, the ranch dressing, dill, cheese and bacon. 

Add in the potatoes. 

Sprinkle in a pinch of salt and pepper. 

Toss to coat potatoes.

Spoon into a greased 9 x 13 baking dish.  

Cover with foil...

NOTE:  The original recipe called for jarred real bacon pieces.  I made the recipe using real 
bacon that I cooked until crisp and then broke into pieces.  Although I am a firm believer that 
there is never a substitute for real, fresh bacon, I would think that the kind from a jar would be 
fine (as long as you don't use imitation bacon bits).

Serve 4.

No, just washed and cut into chunks and then added to the baking dish, but you can do it that way you ask, just the time of baking should be reduced accordingly, and maybe the taste would be different. Maybe I would try that way next time and that would be another recipe. Thank you very much Erin, for stop by and please come back again any time you want.

  3. Do you eat this as an actual meal or do you pair it with something else?

    1. Well Crescent, I think it would work in both ways. I tried it alone and found amazing, but if you ask me my opinion it can be combine with some meat, pork or chicken. I gave 2 examples in the recipe that I think it would in perfect junction. Let me know what you think about and if you give a try, because this recipe of Angela is incredible good.

  8. Do u use red potatoes or brown? I would double batch, as I have 5 mouths to feed, n we all love potatoes! Looks great cant wait to try it, will pass on putting on the scallions, not a fan. Thanks for the recipe in advance! :)

    1. Hi Andrea, thank you very much for your comment. I would prefer red potatoes, but it really does not matter a big difference, just you have to play with the cook time.

      Bake them for 60 minutes. Stir gently halfway through to get the bottom potatoes rotated so they don't become burnt and to ensure that the middle and top potatoes get a chance to brown. Remove foil. Raise oven temperature to 400F. Gently stir again, as necessary. Bake for an additional 15 minutes, then sprinkle on a little more cheese, if desired. Bake a few more minutes or until everything is gooey, browned and bubbly on top. I hope this is what you were looking for and that you come back again to make another comments.

  12. This recipe sounds great but I am confused with the instructions. You have the oven preheated but no cook time. I read the comments and you have answered that question, but when were we suppose to put foil over the poatoes? You did not mention anything about foil in the original recipe.

    Just a sugesstions to rewrite the recipe so that it is understandable for everyone
