Mashed
Potatoes with Cheddar Cheese Bake
“These are
great with any meal.” Catherine
Ingredients:
5 pounds
potatoes, peeled and quartered
2 cloves of
garlic, chopped
1 small red
onion, sliced
3 tablespoon
of butter
2 tablespoons
of sour cream
½ cup of milk
4 ounces
cheddar cheese, shredded
Dashes of
salt
Dashes of freshly
black ground pepper
Olive oil
Preparation:
Boil the
quartered potatoes until fork tender.
Drain the
potatoes and place in a large bowl.
Place the
chopped garlic in with the hot potatoes, the butter, sour cream and milk and
mash
with a masher.
Butter a
casserole dish and place the mashed potatoes in the dish.
Add the
cheddar cheese and toss gently.
Top with the
sliced onion and a drizzle of olive oil.
Preheat Oven
350°F.
Bake 25-30
minutes.
