Peach-Mango
Smoothies
“Mangoes can
be a bit tricky to cut up. They’ve got a large pit seed thing in the middle, so
if you’ve never cut up one before, this is the easiest method for our smoothie
purposes.” KMONT
Ingredients:
2 fresh
peaches, cubed
2 fresh
mangoes, cubed
2/3 cup peach
nectar (one small can)
2 (6-ounce)
containers peach fat-free or light yogurt
Ice cubes,
optional
Raspberries
for garnish, optional
Preparation:
Place the
cubed up peaches and mango pieces in a bowl and mix.
Put the bowl
in the freezer for about one to one and a half hours, until most of the fruit
is frozen
or nearly frozen.
Stir again to
loosen the fruit.
In a blender,
put one 6-ounce container of the yogurt in the bottom.
Next layer in
half the fruit mixture.
Put the other
container of yogurt in and then the other half of the fruit.
Add in the
small can of peach nectar over the top.
Blend until
smooth and creamy.
If your
mixture is a little too loose for your taste, add in several ice cubes, 6-10 or
so, and push
to the bottom of the blender with a spatula.
Blend again
till all the ice is incorporated with no large chunks remaining.
Drop a few
raspberries on top of each smoothie if using.
Serve
immediately.
Makes 2.
