Cold
Salad Macaroni
Ingredients:
2 cups elbow
macaroni
½ cucumber
pickle, chopped
¼ cup carrot,
chopped
1 onion,
chopped
½ pound of
ham or other sausage, diced
2 boiled eggs
2 boiled
potatoes, diced
1 cup light mayonnaise
2 tablespoons
vegetable oil
1 tablespoon
vinegar
3 slices of
pineapple, chopped
1 tablespoon
of salt
¾ pound of cooked
chicken, shredded
2 small tomatoes, cut in 4
Parsley
2 small tomatoes, cut in 4
Parsley
Pepper to
taste
Preparation:
Cook macaroni
in boiling water following the package instructions.
Drain and let
cool.
Set aside.
In a medium
bowl mix cucumber, carrot, onion, ham or other sausage, potatoes, vegetable oil,
vinegar, pineapple, salt, chicken, Pepper and light mayonnaise.
Toss
everything well.
Add macaroni.
Toss
everything again.
Then garnish
with boiled eggs in half, tomatoes and parsley.
Let cool well
before serving.
Serve 4.
