Brown Sugar Glazed Pork Tenderloin

Ingredients:

1 pork tenderloin

½ teaspoon fresh ground black pepper

1 teaspoon cumin

1 teaspoon chili powder

½ teaspoon Cajun seasoning

2 -3 tablespoons olive oil

2 tablespoons butter

½ cup brown sugar

2 tablespoons garlic, finely chopped

1 tablespoon water

Preparation:

Preheat oven to 350°F.

Combine pepper, cumin, Cajun seasoning and chili powder in a small bowl. 

Rub spices generously over the pork tenderloin. 

Heat olive oil and butter over medium-high heat in a large oven proof pot. 

Brown pork tenderloin on all sides.  

In another small bowl, combine brown sugar, garlic, and water. 

Brush on all sides of tenderloin.

Roast in oven for 20 - 22 minutes. 

Remove and let stand for 5 minutes before slice.
