Chicken, Broccoli and Cashew Stir Fry

“Thankfully, once I looked at the recipe, I realized that it was quick, easy, and definitely something I could throw together on one of our busiest nights.” Christine

¼ cup soy sauce

1½ tablespoon dry sherry

¾ teaspoon ground ginger

1½ pounds boneless, skinless chicken breasts cut into 1-2 inch pieces

1 pound fresh broccoli florets cut into pieces

6 tablespoons vegetable or canola oil, divided

½ cup green onions, sliced

2 cloves garlic, minced

1½ cups salted whole cashews

Place chicken pieces in a medium-sized bowl.

In a small bowl, whisk together the soy sauce, dry sherry and ground ginger.

Pour the marinade over the chicken, stirring just to make sure the marinade is evenly

Let the chicken stand for 10 minutes while you prep the veggies.
