Crab Roll Ups
“First things first….don’t skimp
on the crab meat. After living in the DC
area, I’ll readily admit that I’ve become a bit of a crab snob. Living in the land of the perfected crab cake
will do that to a person. For this
recipe, you’ll need 8 oz. of jumbo lump crab meat. Not “Krab” meat, not the wimpy canned stuff in
the tuna aisle. CRAB meat. The good
stuff. You can usually find it,
refrigerated, near your grocery store’s seafood counter.” Christine
Ingredients:
5 large,
Burrito sized flour tortillas
1 8 ounces
package cream cheese
⅓ cup
mayonnaise
⅔ cup finely
chopped red pepper
¼ cup finely
chopped green onion
⅔ cup
shredded cheddar cheese
½ teaspoon
Old Bay seasoning
8 ounces lump
crab meat
Preparation:
With a hand
mixer, mix together cream cheese and mayonnaise until smooth.
Stir in
pepper, green onion, cheddar cheese and Old Bay.
Fold in the
crab meat.
Spread a thin
layer of the crab mixture onto each tortilla.
Tightly roll
the tortillas up and wrap in plastic wrap.
Chill 3 hours
or overnight.
Cut into ¾
inch slices.
Sprinkle with
more Old Bay, if desired.
Serve 10.
