Stuffed Mediterranean Style Boneless Center Cut Pork Roast

The bold and pungent flavor of the capers is ever present in each bite and clash in a splendid array of flavors with the fresh parsley and basil while maintains its integrity and ever elegant presence. Yet, there is a surprising and almost garden like quality of the freshness of the flavors which one would expect to find only in lighter, more summer orientated dishes. Ingredients:

3 pounds boneless center cut pork roast

2 tablespoons olive oil

1 tablespoon lemon juice

1 teaspoon LTG Dry Herb Rub


1 slice lemon

Stuffing:

Juice of ¼ lemons

¼ red pepper flakes

1 full teaspoon capers

1 cup Italian parsley

½ cup basil

½ cup grape tomatoes

3 tablespoons olive oil

¼ teaspoon black pepper

1 small chunk Romano cheese (about 1½ inch piece)

Preparation:

Preheat oven to 350°F.

Rub meat with slice of lemon.

Combine olive oil, lemon juice, Signature Spice Mix and Dry Herb Rub in a small bowl.

Rub meat well with this mixture.

Prepare stuffing ingredients in a food processor and give it a few good chops.

Place meat in oven.

When meat is half way cooked (about half an hour) takes out of oven and make about 1-inch slit 
down the middle of the meat from end to end.

Stuff with stuffing mixture.

Place meat back in the oven for about another 30 – 35 minutes.
