Spicy White Chicken Chili in a Bread Bowl

Spicy White Chicken Chili in a Bread Bowl

“This white chili is the perfect solution to the cold day. The bread bowl isn’t absolutely necessary but you will thank yourself for it.” Jodie Mo

Ingredients:

3 cans white beans, rinsed and drained

1 large onion finely chopped

2 cloves garlic, minced

2 tablespoons olive oil

4-5 cups chicken broth

2- 4 ounce cans diced green chilies

1½ teaspoons ground cumin

1 teaspoons oregano

Pinch of red pepper

8 ounces of cooked chicken, shredded

Round crusty loaves of bread or cornbread squares

Toppings:

Sour cream

Cheddar

Diced jalapeño

Preparation:

Heat oil in a large pot.

Sauté onion and garlic until onion is tender.

Stir in beans, broth, diced chilies, cumin, oregano, and red pepper.

Bring to boiling and simmer for 20 minutes.

Mash beans slightly to thicken soup.

Add chicken.

Check seasonings.

Hollow out round loaves or split cornbread and serve chili in bread bowls or over cornbread.

Top with sour cream, cheese, and jalapeño.
