Very
Colorful Blueberry Muffins, for Breakfast
“A nice,
lovely purple color, all natural, of course. So there you have it. Muffins for
breakfast.” Marion
Ingredients:
350 g. flour
2 teaspoons baking
powder
A pinch of
salt
1 teaspoon vanilla extract
115 g.
butter, melted
2 eggs
115 g. soft
brown sugar
300 ml. milk
180 g.
blueberries
Preparation:
Preheat the
oven to 200°C.
In a bowl,
mix the flour, baking powder, salt and brown sugar. In another bowl mix the
vanilla
essence, butter, eggs and milk and beat until smooth.
Pour the
liquid mixture over the dry ingredients and combine well.
Fold in the
blueberries and divide the batter between the 16 muffin paper cases.
Bake for 25
minutes or until a skewer inserted in the centre of a muffin comes out clean.
