Bulgur
Salad
“This healthy
salad was a simple mix of Bulgur, cherry tomatoes, cucumber and fresh herbs.
That was already a delicious mix of things, but all of that was topped with a
light lemon dressing. It’s such a simple mix but so good all together.” Cherine
Ingredients:
1 cup bulgur
(cracked wheat)
1 cup hot
water
Zest of one
lemon
3 tablespoons
lemon juice
1 garlic
clove crushed
1 cup chopped
parsley
½ cup chopped
mint
½ cup sliced
green onions
3 cups chopped
cherry tomatoes halved
1¼ cup
chopped cucumber
Salt and
pepper
3 tablespoons
olive oil
Preparation:
Let bulgur
soak in the hot boiling water for about 50 minutes.
When bulgur
had absorbed all the water, stir in the olive oil, zest and lemon juice, and
the garlic.
Let it
marinate while you chop the vegetables.
Combine all
the chopped vegetables in the bulgur.
Season with
salt and pepper.
Serves 4 to
6.
