Oven Roasted Chicken and Potatoes

Ingredients:

¾ pounds diced chicken

½ cup chicken broth

1½ teaspoons dried thyme

1 tablespoon olive oil

¼ teaspoon salt

⅛ teaspoon pepper

¾ pounds red potatoes, cubed

1 medium onion, quartered

Directions:

Heat oven to 350°F.

Combine all ingredients in a greased baking dish.

Cover

Bake for 30 minutes.

Remove cover and bake an additional 30 minutes.

Serve.
