Salmon
couscous salad Recipe
Ingredients:
1 Salmon
fillet
Few tomatoes,
quartered
100g couscous
150g vegetable
stock
Handful of
spinach
Few
mushrooms, sliced
Half a
cucumber, sliced
Juice of half
a lemon
Preparation:
Grill or
poach the salmon, then flake into pieces.
Meanwhile,
add the hot stock to the couscous and cover with a plate for 5 minutes
Toss the rest
of your ingredients together.
Add in the
salmon flakes and couscous.
