Grilled Chicken Breast

3 lbs. boneless chicken breast

2 tablespoons olive oil

For the Spice Rub:

1 tsp. curry powder

1 tsp. garlic powder

¾ tsp. ground cumin powder

½ tsp. sugar

½ tsp. ground cinnamon

½ tsp. turmeric

1 tablespoon Worcestershire Sauce

1 tablespoon soy sauce


Combine all of the ingredients for the rub in a small bowl and mix.

Heat a large cast iron frying pan with the olive oil. 

Add the chicken breast and sauté until golden on one side. 

Flip over and spoon the rub over the grilled side.

When the other side is golden flip and spoon the remainder of the rub on the chicken.

Continue cooking; gently flip to finish the cooking process on the other side.

The thickest part should have the juices run clear when cooked.

“Although originally from South America, most of the world's Pineapples now come from Southeast Asia.  They spread so thoroughly across the world because they were kept on board ships, to help ward off scurvy in sailors.  Our simple cocktail is truly a Pineapple lover's treat.  With a couple of spirits, and a couple of Pineapple mixers, we give you another delicious featured cocktail... Pineapple In Paradise.  Cheers!” hamptonroadshappyhour


2 oz. Pineapple Rum

1 oz. Vodka (Pineapple flavored, if available)

3 oz. Pineapple Juice

3 oz. Fanta Pineapple Soda

Pineapple Wedge and/or Cherry to garnish


Add the Rum, Vodka, and Pineapple Juice, to an ice filled cocktail shaker. 

Cover, shake well, and then add the Pineapple Soda. 

Give it a good stir, and pour into your favorite cocktail glass. 

Garnish accordingly, and get ready to find your own Utopia, as you sip your... Pineapple In 

Bottoms up but, please drink responsible!

“For dinner I grilled Chicken Breasts and served them with a Grilled Pineapple Salsa.” Ann

The chicken:

Was pre-salted on Saturday.

Rubbed with fresh garlic and chipotle pepper flakes.

Grilled over indirect heat.

For the salsa:

I cored and sliced a ripe pineapple.

Brushed the rings with butter and grilled turning once.

Also grilled the red pepper.

The pineapple and peppers were cut into bite size pieces and tossed with sliced red onion, 
garlic, jalapeno pepper and cilantro. 

Seasoned with salt and the juice of half a lime.
