Ann's Anniversary Dinner
Happy Anniversary Ann!!!
“For dinner I grilled Chicken Breasts and served them with a Grilled Pineapple Salsa.” Ann
Was pre-salted on Saturday.
Rubbed with fresh garlic and chipotle pepper flakes.
Grilled over indirect heat.
For the salsa:
I cored and sliced a ripe pineapple.
Brushed the rings with butter and grilled turning once.
Also grilled the red pepper.
The pineapple and peppers were cut into bite size pieces and tossed with sliced red onion,
garlic, jalapeno pepper and cilantro.
Seasoned with salt and the juice of half a lime.
