Thirty-Minute "Good For You" Minestrone Soup

Thirty-Minute "Good For You" Minestrone Soup

“This Minestrone Soup is a fabulous option for those busy weeknights when we don't have a great deal of time, but still want something hearty, comforting and satisfying.”  Angela

Ingredients:

2 tablespoons olive oil

1 large onion, peeled and chopped

3 carrots, peeled and sliced

1 celery stalk, chopped

1 cup lima beans (slightly thawed from frozen)

3 cloves garlic, peeled and minced

3 ounces fresh button mushrooms, cleaned and sliced (optional)

1 teaspoon kosher salt

1/2 teaspoon black pepper

1 can diced tomatoes (including liquid)

5 cups chicken stock

1 teaspoon dried basil

1 cup uncooked ditalini pasta or another small pasta shape

1 cans (14.5 - 15 oz.) cannellini beans, drained and rinsed

Freshly-grated Parmesan cheese, for garnish

Directions:

Sauté the onions, celery and carrots in olive oil over medium-heat in a heavy-bottomed soup 
pot for 4 - 5 minutes. 

Add in the garlic, lima beans and mushrooms.

Note:  It may be necessary to add in a little stock or water when reheating leftovers.  The soup 
does thicken a bit in the fridge.
