Grilled Chicken Breast
“Life is a promise that is constantly being renewed.” Catherine
3 lbs. boneless chicken breast
2 tablespoons olive oil
For the Spice Rub:
1 tsp. curry powder
1 tsp. garlic powder
¾ tsp. ground cumin powder
½ tsp. sugar
½ tsp. ground cinnamon
½ tsp. turmeric
1 tablespoon Worcestershire Sauce
1 tablespoon soy sauce
Combine all of the ingredients for the rub in a small bowl and mix.
Heat a large cast iron frying pan with the olive oil.
Add the chicken breast and sauté until golden on one side.
Flip over and spoon the rub over the grilled side.
When the other side is golden flip and spoon the remainder of the rub on the chicken.
Continue cooking; gently flip to finish the cooking process on the other side.
The thickest part should have the juices run clear when cooked.
